White Wedding Cakes
I love wedding cakes. Maybe it’s because I never had a large birthday cake growing up that I am so fascinated by them. To me, there is something magically celebratory about a tiered cake. I’m also a fan of other desserts and have seen beautiful displays that were meant to stand in for a wedding cake. My favorite was a tiered stand that held a mix of tarts (lemon meringue with candied ginger & bittersweet chocolate with coffee nibs and crushed honeycomb). It was gorgeously dressed up with pink peonies and succulents. As amazing as that was, I think a cake — even a small, symbolic one — is irreplaceable. Of course it has to taste good or it’s a bit of a letdown after all that anticipation builds up.
I’m always surprised by how many brides and grooms insist on having a white wedding cake. I can’t blame them, though. Like a white dress, a white cake is timeless. A word of advice — since white cakes are so muted, the texture and shape of the cake become incredibly important. That’s what I like so much about each one of these cakes. The craftsmanship and sculptural quality of each cake is amazing — look at those sugar flowers! The cake on the bottom-center isn’t pure white, but I think it would be gorgeous in a shimmery champagne color with pearly white dots. That kind of subtle shade difference really takes a simple white cake to the next level.
